Hello! If you are looking for a unique, healthy, and delicious dish... this is it!
7-8 large cucumbers, skin peeled and spiralized
1 1/2 cups cashews, soaked overnight & drained
1 can full fat coconut milk, 13.5 oz.
1/4 cup olive oil
3 Tbsp lemon juice
4 cloves of garlic
1 Tbsp dried dill
1 1/2 tsp salt
1/4 tsp white pepper
Cut ends off of cucumbers. Use a vegetable peeler to peel skin off. Spiralize cucumbers into a large bowl. To make sauce... add soaked cashews, coconut milk, olive oil, lemon juice, garlic, salt, and white pepper to a blender. Blend until smooth. Stir in dried dill. Pour sauce over cucumbers. Toss and serve garnished with fresh tomatoes.
The great thing about this dish is that you can serve it hot or cold or in between. If you want to chill it for a couple hours, it would be a great summer dish. You can also warm the sauce before pouring it over the cucumbers to make it like pasta. Also, you can substitute the cucumbers for pasta, if you please.
